Frosty Morning

Good morning!

As I was outside watching my son get on the bus, I noticed a bunch of icy frost formations on my deck rail. So naturally, I go grab my camera and put my macro lens on it to take some shots :)

First round of exams....

Had my first round of exams this week....how about you? How did you do?

Yes, I am 37 and finally going to college!! This semester has been stressful, yet fun. I am finally learning to code!! It is very time consuming. Good thing I have a crock-pot with a bunch of yummy recipes! I don't know how anyone can do this and work FT, I am only working PT and I feel strained!
I was so worried about my first coding exam, but I pulled through with a 90%! I am feeling good! On to the next set of tasks for this week. I am taking it one week at a time. If I look too far ahead in my my studies, I get overwhelmed and freaked out, wondering "can I do this"? I have to remind myself to take it one thing at a time.

Are you a Mom going back to college?? Feel free to share your experiences and recommend things that help you get through!

My Challenge to You

I don't like to talk politics or religion, but seeing the responses to the State of the Union Address, I feel the need to send out a challenge.

Here it is.... in the 2016 election, I challenge you to NOT vote Democratic OR Republican.

Why you ask?  Well this is why...we NEED a change!!! When a Democrat or a Republican is in the White House, almost nothing gets done, one is always blocking the other, and petty disputes happen.

Please look at the other candidates, don't only look at the ones being paid the big bucks. That is what this country has come down to, is voting for the guy with the biggest contributions. Take a look at the other candidates... actually READ what they stand for. Maybe they make sense (OMG, common sense, unreal) and take a little good from both the Left and the Right. If more vote for someone other than the big TWO, we can send government a message and actually make a change that needs to happen.

Must have BREAKFAST!!!

I did not gain a pound over the Holidays! AND I have not been sick, even tho family around me have been sick.... how am I doing this?? SIMPLE!! I have a smoothie every morning. I buy the frozen berries.... blueberries, strawberries, blackberries and raspberries. I also add a banana and about an eighth of a cup of vanilla yogurt. I also add whole oats for the fiber and keep from being hungry too soon before lunch. Feel free to add some baby spinach if you are like me and don't eat your greens like you should. The berries will hide the spinach flavor and you will get the vitamins you need!

I don't use any recipe in particular, I just eyeball it....but here is about what I do
2 ice cubes
4-5 whole (frozen) strawberries
10-15 (frozen) blueberries
10-15 (frozen) raspberries
1/2 of a banana
1/4 to 1/2 cup of 2% milk
about an eighth of a cup of Dannon Light and Fit Vanilla Yogurt
just under an eighth of a cup of whole oats
Blend. Add more milk if too thick.
Pour and enjoy :)

Feel free to mix it up and have just a strawberry/banana smoothie
or whatever you want! Smoothies are so easy, you can add just about anything. And they are portable if you are heading out.

The BEST crock-pot Potato soup...

OK, I HAVE to share this!! I found this on Pinterest and I LOVED it!!! It is very filling and PERFECT for these cold winter evenings. It is a comfort food, not a diet food ;)

Ingredients:
1 30oz. bag of frozen diced hash browns
1 32 oz box of chicken broth
1 can of cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
3 oz bacon bits
1 cup shredded cheddar cheese
salt and pepper to taste

Directions:
Put the hash browns in the crockpot.  Add in the chicken broth, cream of chicken soup and half of the bacon bits.  Add a pinch of salt and pepper.
Cook on low for 7-8 hours or until potatoes are tender.
An hour before serving, cut the cream cheese into small cubes.  Place the cubes in the crock pot.  Mix a few times throughout the hour before serving.
Once the cream cheese is completely mixed in, it's ready to serve.
Top with cheddar cheese and some additional bacon bits.
Enjoy!

Happy New Year....14 days in

Hello from Dayton, Ohio! Where is can rain at your neighbors house while it is snowing at your house! Maybe a small exaggeration, but the differences between North of I70 and South of I70 it can be snowing on one side and raining on the other!
Here is an example of what weather looked like where I was at a couple weeks ago...

I wanted to start a fresh new blog to share my experiences, family life, cooking, photography, and life as a mom and a wife while juggling work and school. Please feel free to comment and share, or just lurk. I don't mind :)  Just enjoy!

This week has been nuts. It is the second week of the semester and finally started to learn coding! I am very excited, but my brain hurts! So many numbers and steps to take in this enormous ICD-90-CM book! Today, alone, I spent 5 hours doing coding homework. Oh well, as long as it takes me to graduation to finally get out of retail, I don't mind one bit!!!
